I guess I'm an adult now
Because this is pretty much what I consider an excellent day (and I’ve had several this week): work hard with my clients, go to the gym and work harder, come home to water the tomatoes, feed the dogs, and cook a delicious, balanced meal while listening to music and sipping wine.

One-Pot Dinners
are the best. This one is just random stuff from the pantry and fridge, but it was delicious. I guess we can call it Pesto Chicken with Israeli Couscous. OMG Coconut Milk Ice Cream!

This ice cream is amazing. It’s creamy, sweet, rich, and dense. And it could easily be adapted in any number of ways. Since I didn’t have full-fat coconut milk, I subbed in some regular dairy to make it creamier. But you could make this totally vegan by just using full-fat coconut milk and making sure that your cocoa powder is dairy free.

Epic Deliciousness
I mean, for real. All I was trying to do was use up the wilting strawberries in my fridge and make a treat for my boyfriend to take to work. I wasn’t trying to melt everyone’s face off with amazingness.
